排骨食譜|冰糖甜醋排骨 Braised Spare Ribs with Sweetened Vin

這道冰糖甜醋排骨,除了啖啖肉之外,甜甜酸酸的味道更是超好送飯,而且做法簡單,又愈放愈入味,一次過煮一大鍋慢慢食,好方便!

食材
一字排 Spare ribs 1.5千克/kg
紹興酒 ShaoXing wine 2湯匙/tbsp
冰糖 Rock sugar 2塊 / pcs
老抽 Dark soy sauce 2湯匙 / tbsp
蒸魚豉油 Seasoned soy sauce for seafood 4湯匙 / tbsp
甜醋 Dark sweet vinegar 8湯匙 / tbsp
水 Water 10湯匙 / tbs
薑片 Ginger slice 適量 / Some
紅葱頭碎 Minced shallot 適量 / Some
蒜片 Ginger slice 適量 / Some

作法:
1 :
排骨切條汆水備用 Blanch the big slip ribs for later use.
2 :
]炒香薑片, 紅葱頭,蒜。加入巳飛水排骨。略炒 Fry ginger, shallot and garlic for a while and add in the blanched ribs.
3 :
加入酒,冰糖,甜醋,老抽,豉油,水 Add Shaoxing wine, rock sugar, vinegar, soy sauce for seafood, dark soy sauce and water.
4 :
大火煮滾後,蓋上蓋,轉中小火。 間中兜炒,煮約一小時至排骨軟身,完成 Cook with high heat until boiling. Cover and simmer for 1 hour until the rids tender. Done.
