氣炸鍋食譜|脆皮雞下髀 Airfryer Crispy Chicken Drumstrick

雞下髀即係雞鎚,啖啖肉又有雞味,食落開心又滿足,一向都好受小朋友同大朋友歡迎。今次仲預備咗個皮水,一出爐就香噴噴,個皮又卜卜脆,真係想食完一隻又一隻!

食材
雞錘 Drumsticks 2隻/pcs
沙薑粉 Sand ginger powder 1茶匙/tsp
鹽 Salt ¼茶匙/tsp
胡椒粉 Pepper powder ¼茶匙/tsp
葱 Spring onion 少量/some
紅葱頭 Shallot 半粒/½pc
麥芽糖 Maltose 1湯匙/tbsp
昭興酒 Shaoxing wine 1茶匙/tsp
白醋 White vinegar 200毫升/ml
紅醋 Red vinegar 100毫升/ml

作法:
1 :
將沙薑粉,鹽,胡椒粉, 蔥,紅蔥頭醃雞錘 Marinate drumsticks with sand ginger powder, salt, pepper, spring onion and shallots.
2 :
用保鮮紙封好過夜 Wrap drumsticks with plastic wrap, let marinate overnight.
3 :
勻白醋,紅醋,麥芽糖及紹興酒,待用 Stir and boil white vinegar, red vinegar, maltose and Shaoxing wine.
4 :
熱水輕煮雞錘 Boil the drumsticks for short while.
5 :
將雞錘浸醋 Soak drumsticks in vinegar mixture.
6 :
風乾至少都要兩個鐘 Take at least two hours to air dry.
7 :
氣炸170度15分鐘 Air fry for 15 minutes at 170°C.
8 :
反轉雞錘 Flip over.
9 :
放入氣炸鍋以200度氣炸2分鐘 air fry for 2 minutes at 200 °C.
