牛腩食譜|電飯煲番茄薯仔炆牛腩 Braised beef brisket with tomato

炆牛腩是很多人都喜歡的家庭菜式,不過要慢火細炆就有點花時間。今次改用電飯煲來製作就方便得多。這道電飯煲菜式中,牛腩與番茄、薯仔和洋葱一同燉煮,讓牛腩的鮮美滋味融入湯汁中,與番茄和薯仔的甜味交融,配白飯、麵包或其他主食都十分適合。

食材
牛腩 Beef brisket 600克/g
番茄 Tomato 2個/pcs
薯仔 Potato 2個/pcs
洋葱 Onion ½個/pc
生抽 Soy sauce 3湯匙/tbsp
老抽 Dark soy sauce 2湯匙/tbsp
蠔油 Oyster sauce 2湯匙/tbsp
紹興酒 Shaoxing wine 2湯匙/tbsp
薑蓉 Minced ginger 2湯匙/tbsp
蒜蓉 Minced garlic 2湯匙/tbsp
茄汁 Ketchup 2湯匙/tbsp
冰糖 Rock sugar 1茶匙/tsp
鹽 Salt ½茶匙/tbsp
碎黑胡椒 Ground black pepper ½茶匙/tbsp
月桂葉 Bay leaf 2片/leaves
八角 Star anise 2粒/pcs
水 Water 250 毫升/ml
油 Oil 少許/some

作法:
1 :

番茄切件備用 Cut tomatoes into pieces and set aside.
2 :

薯仔切件備用 Cut potatoes into pieces and set aside.
3 :

洋葱切塊備用 Cut onion into chunks and set aside.
4 :
牛腩洗淨印乾 Rinse the beef brisket and pat dry.
5 :

加入生抽、老抽、蠔油、紹興酒、薑蓉、蒜蓉、茄汁、冰糖、鹽及碎黑胡椒拌勻 Mix with soy sauce, dark soy sauce, oyster sauce, Shaoxing wine, minced ginger, minced garlic, ketchup, rock sugar, salt, and ground black pepper.

在電飯煲內加少許油,按煮飯鍵開始烹調 Add a little cooking oil to the rice cooker and start the cooking function.
7 :

加入洋葱塊炒2-3分鐘 Add the onion chunks and stir-fry for 2-3 minutes.
8 :

將牛腩連同醬汁倒入電飯煲內 Pour the beef brisket and the sauce mixture into the rice cooker.
9 :

加入月桂葉、八角及水,續煮30分鐘 Add bay leaves, star anise, and water. Continue cooking for 30 minutes.
10 :

開蓋,加入番茄及薯仔塊 Open the lid, add the tomatoes and potato pieces.
11 :

續煮至煮飯程序完成 Continue cooking until the rice cooker program is complete.
12 :
若想牛腩再腍一點,可以讓牛腩在電飯煲內焗15分鐘 Let the beef brisket rest in the rice cooker for 15 minutes before serving.
