脆香雞翼食譜|脆香雞翼做法

快餐店嘅脆香雞翼一向受歡迎,不過價錢都唔平,如果自己整,同樣嘅價錢就可以食好多隻!一於自己炸啦!

食材
雞翼 Chicken wing 1磅/LB(約10隻
薑 Ginger 2片/slices
紹興酒 Shaoxing wine 1湯匙/tbsp
雞蛋(拂勻) Whisked egg 1-2隻/pcs
【醃料】雞粉 Chicken powder 1茶匙/tsp
【醃料】白胡椒粉 White pepper powder ½茶匙/tsp
【炸粉】炸粉 Fried powder 1杯/cup
【炸粉】黑胡椒粉 Black pepper powder 1茶匙/tsp
【炸粉】紅椒粉 Paprika ½茶匙/tsp
【炸粉】雞粉 Chicken powder ½茶匙/tsp
【炸粉】鹽 Salt 少許/Some

作法:
1 :

雞翼解凍洗淨,放滾水內與薑片及紹興酒中火同煮10分鐘盛起 Thaw and wash chicken wings, then boil them in a pot of boiling water with ginger slices and Shaoxing wine over medium heat for 10 minutes. Remove from the pot and set aside.
2 :

雞翼放冰水內冷卻,盛起後用廚紙印乾,加醃料醃15分鐘 Cool the chicken wings in ice water, then pat them dry with kitchen paper. Marinate the chicken wings with the marinade for 15 minutes.
3 :

炸粉材料拌勻備用 Mix the coating ingredients together and set aside.
4 :

雞翼先沾上蛋液,沾一層薄薄的炸粉,再沾一次蛋液,再沾一次炸粉 Dip each chicken wing in the beaten egg, then coat with a thin layer of coating mixture. Repeat the egg and coating process once more.
5 :

雞翼放熱油內中火炸至金黃色,取出後用廚紙吸乾油份,完成 Deep-fry the chicken wings in hot oil over medium heat until golden brown. Remove from the oil and place on kitchen paper to remove excess oil. Serve hot.
